 My husband is a Good Day biscuit fan, so thought of baking them my way so that it will serve as a better option to munch on. To my surprise it came out well. Gluten free and vegan choco brownie sweetened with fruits.

Ingredients Rice flour     - 1/2 cup Jowar flour - 1/2 cup Dates & chikoo paste - 3/4 - 1cup Baking soda - 1/2 tspn Baking powder - 3/4 tspn Chopped nuts - 1/2 cup Unflavored oil - 5 tablespoon Unsweetened cocoa powder - 3-4 tablespoon Vanilla extract - few drops Salt a pinch Method Preheat oven at 180 degree for 10 minutes. Grease a 5 inch cake tin n lay parchment paper and keep it ready. Soak around 15-18 deseeded soft dates in 3/4 cup hot water for half an hour. Take 3-5 medium size ripe chikoo fruit and remove the skin and seeds. Chop them into small pieces. Put the chopped chikoo and soaked dates along with soaked water in a blender jar n make a smooth paste. Sieve flours, baking soda, baking powder, salt and cocoa powder 3-4 times n keep aside. Take dates & chikoo paste, oil, vanilla extract in a deep bowl and beat well. Add the dry ingredients gradually n fold well. Add chopped nuts n mix well. Gluten free carrot cake

 Some experiments come out beautifully. A gluten-free cake baked with healthy flours & sweetners. Ingredients   Arrowroot powder   - 3/4 cup Jowar flour - 1/2 cup Dates syrup - 1 cup Unflavored oil - 5 tablespoon Curd - 1/2 cup Baking soda - 1/2 teaspoon Baking powder - 1/2 teaspoon Grated carrot - 1 cup Cinnamon powder - 1/2 teaspoon Vanilla essence few drops Salt a pinch Milk if needed Method   Preheat oven at 190 degree for 10 mins. Grease the cake tin and line with parchment paper. Sieve the flours with salt, cinnamon powder and baking powder 3 to 4 times. Take curd in a deep bowl, mix baking soda and keep aside. It will froth up a little. Mix vanilla essence, dates syrup and oil in curd mixture thoroughly. Gradually add dry mixture and grated carrots and fold well.  This cake is baked with all the little little stuffs remaining here and there in kitchen 😀 Few red carrots, little Mawa, little bit of coconut sugar, bajra & jowar flours.... Tadaaa.....a healthy and equally delicious & soft cake was ready in no time. Moreover, hapiness is kids too relished it🤗..... Ingredients 100 gms jowar flour 60 gms bajra flour 1 cup curd 1/4 cup water 1 cup coconut sugar 3 tablespoon unflavored oil 1/4 tspn baking soda 3/4 tspn baking powder 1/2 cup grated Mawa 1/2 cup grated carrots 1/2 tspn cardamom powder 1/2 tspn cinnamon powder Milk 2-3 tablespoon if required Salt a pinch  Method Blend curd, water and coconut sugar in a mixer jar and pour in a deep bowl.  Add baking soda and keep aside for couple of minutes.. Green gram laddoos

 Yes my family is a 'sweet' family 😛..I mean they have a sweet tooth😀..so I have to figure out ways to prepare sweet dishes for them but in somewhat healthy way (so that I am at peace) Ingredients   1 cup green gram       2 tablespoon flaxseeds 1 tablespoon white sesame seeds 1 tablespoon black sesame seeds 1/2 cup dry fruits of your choice 3 tablespoon ghee 3-4 tablespoon dates syrup Method Dry roast green gram(moong),  flaxseeds, sesame seeds and dry fruits  for few minutes till u smell the Aroma and it turns to a light brown colour. Cool down. Grind in a mixer jar (not too smooth powder, little coarse). Heat 3 tablespoon ghee in a pan and roast this powder till everything combines. Take out of stove and cool a bit. Add 3-4 tablespoon dates syrup (u can use jaggery syrup too) n mix well. Roll out laddoos and gobble down😂.

Gluten free - Ragi Brownie

  Ingredients 1 cup ragi flour 3/4 cup coconut sugar 3 tablespoon unflavored oil 2 tablespoon flax seeds 1 cup hot water 1/2 tspn baking powder 3 tablespoon melted dark chocolate 2 tablespoon light cocoa powder 1 tablespoon dark cocoa powder 1/2 cup chopped mixed nuts Vanilla/chocolate essence few drops(optional) Salt a pinch Method Roast 2 tablespoon flax seeds for few minutes , cool and powder it. Add one cup hot water to flax seeds powder and keep aside for 10 minutes. This is called flax egg. Seive ragi flour, salt, cocoa powder and baking powder 4-6 times. Take a deep bowl add flax egg, coconut sugar, oil, melted chocolate, essence and mix well with a hand whisk. Add dry ingredients gradually and mix well. Add chopped nuts and mix into the batter. Adjust consistency with hot water if required. Pour into a square tin which is greased and laid with parchment paper and sprinkle some chopped nuts on top. Tap the tin a bit. Ingredients 1 cup wheat flour 3/4 cup powdered organic unrefined sugar 2 eggs 3 tablespoon unflavored oil 2 tspn orange peel powder/ orange zest 1/2 cup fresh orange juice Few drops natural orange extract/essence 1/2 tspn baking powder Salt a pinch Method Sieve flour, salt and baking powder 4-6 times and keep aside. In a deep bowl whisk nicely eggs with powdered unrefined sugar and orange extract/essence. Add oil and dry Ingredients gradually and mix well. Finally add the orange juice and zest/ orange peel powder and fold well to form a batter. Pour in a greased/parchment lined cake tin and bake in a preheated oven at 180 degrees for 40-45 mins or till a toothpick comes out clean. Let it cool and slice & enjoy. Notes 1/2 cup curd with 1/4 tspn baking soda can be used instead of eggs. In that case if needed add little hot water to adjust consistency if required. Pizookie / skillet cookie

  How about a pizza size cookie?? Yeah, it's called a Pizookie, I try always a healthy version...let's see how?? Ingredients 1/2 cup wheat flour 1/2 cup jowar flour 3.5 tblspn soft butter 1/2 tspn baking powder 1/2 cup choco chips 3/4 cup coconut sugar Milk as required (1-2 tblspn) Salt a pinch Method In a large bowl take flours, salt, baking powder and butter. Mix well with hand to get a grainy texture. Add coconut sugar & choco chips and mix well. Get together everything, add little milk so it forms a rough dough. Take an iron skillet, grease and place a parchment paper on it. Transfer the dough on to the skillet and spread nicely, sprinkle some choco chips on top. Bake the Pizookie on the gas stove with closed lid initial 3 minutes on high heat, then on low heat for another 30-35 minutes or till done.(take care it should not burn from below so use the small gas burner on lowest heat.) Finally if u want a good brown colour on top, u can preheat an oven , keep the skillet ...

Healthy plum cake

A healthy version of plum cake, let's see how... Ingredients 1 cup wheat flour 3 tblspn bajra flour 3 tblspn jowar flour 1 - 1.25 cup melted jaggery 1 cup curd 1/4 tspn baking soda 3/4 tspn baking powder 1 cup soaked dry fruits 1 tablespoon spice mix 1.25 tspn orange zest/peel powder 3 tablespoon oil 2 tablespoon cocoa powder 1/4 tspn dry ginger powder. Few drops of orange/lemon essence Salt a pinch Melted jaggery Melt jaggery in little water to get flowing consistency melted jaggery. Dark jaggery better. Strain n use. Spice mix Dry roast  3 cardamom pods, an inch cinnamon stick, 6-8 black pepper corns, a piece of star anise, mace & nutmeg, 6-8 cloves and powder them. Soaked dry fruits Soak dry fruits of your choice or whatever available in alcohol or juice. Orange juice or wine can b used. If soaking in alcohol (rum / brandy) soak for more days and use and can b stored outside. If using in juice then 1 day is fine , store in fridge . Or 2-3 hours outsid...

Masala chai cake

  Am a fan of Indian chai and a baking enthusiast....thought of combining both of them my style.....let's see how Ingredients 1 cup oats powder 1/4 cup jowar flour 2 tablespoon flax seed powder 3/4 - 1 cup melted jaggery 3.5 tablespoon oil 3/4 tspn baking soda 1 1/4 tspn baking powder 1/3 cup curd 1/2 cup masala tea concoction Salt a pinch Method Dry roast oats and flax seeds, powder it when it's warm and keep aside. Boil 3/4 cup milk, add coarsely grinded masala(clove, cardamom, cinnamon, fennel seeds, black pepper) , grated fresh ginger and tea leaves and let it boil n reduce till 1/2 cup. Let it cool down. Take a bowl mix curd and soda & leave for 3 minutes till it froths a bit. Mix oats powder, flaxseeds powder, jowar flour, baking powder and salt well. Add oil , melted jaggery to the curd-soda mixture and whisk well. ( I used hand whisk). Add dry ingredients to wet ingredients and gradually mix , add tea concoction along and make a batter. Peanut butter- coconut cookies with dates syrup

 Coconut cookies with a difference which makes it gluten-free too.....let's see how... Ingredients 1 cup amaranth flour 1/2 cup desicated Coconut 5-6 tabelspoon dates syrup 3 tablespoon peanut Butter 1 teaspoon cardamom powder Water if required Salt a pinch Method Take amaranth flour, desicated Coconut, salt,  peanut butter and cardamom powder in a bowl and rub with hand so that it becomes sand like texture. Add dates syrup spoon by spoon and gather everything to form a rough dough. Take spoonful into hands, roll n give any shape to the cookies, sprinkle some desicated Coconut on top. Bake in a parchment lined tray @ 170 degree for 15-18 minutes  in a preheated oven. Remove, let it cool and store in an airtight container. Notes I used 250 ml measurement cup To knead and mix use water if required only that too add spoon by spoon. Roast desicated coconut a little to enhance its flavours and smell.

Gluten free cake with jaggery and dates syrup

Another gluten free cake from my kitchen, let's see how this healthy version is being baked...
