Gluten-free mawa-carrot cake
This cake is baked with all the little little stuffs remaining here and there in kitchen 😀
Few red carrots, little Mawa, little bit of coconut sugar, bajra & jowar flours....
Tadaaa.....a healthy and equally delicious & soft cake was ready in no time. Moreover, hapiness is kids too relished it🤗.....
Ingredients
- 100 gms jowar flour
- 60 gms bajra flour
- 1 cup curd
- 1/4 cup water
- 1 cup coconut sugar
- 3 tablespoon unflavored oil
- 1/4 tspn baking soda
- 3/4 tspn baking powder
- 1/2 cup grated Mawa
- 1/2 cup grated carrots
- 1/2 tspn cardamom powder
- 1/2 tspn cinnamon powder
- Milk 2-3 tablespoon if required
- Salt a pinch
Method
- Blend curd, water and coconut sugar in a mixer jar and pour in a deep bowl.
- Add baking soda and keep aside for couple of minutes..
- Sieve flours, baking powder and salt 4-5 times.
- Add oil, cardamom powder, cinnamon powder to curd mixture and mix well.
- Gradually add dry ingredients to wet ingredients in batches n mix well.
- Add grated Mawa and carrots to it and mix.
- Add milk if required to adjust consistency.
- Bake in a greased tin in a preheated oven at 170 degree for 50-55 mins.
Notes
- Curd should not be sour.
- Coconut sugar can be replaced with jaggery too.
- If the curd has sufficient amount of water in it , do not add additional water.
- Act as per your oven temperature and settings.
