Gluten-free mawa-carrot cake

 This cake is baked with all the little little stuffs remaining here and there in kitchen 😀

Few red carrots, little Mawa, little bit of coconut sugar, bajra & jowar flours....

Tadaaa.....a healthy and equally delicious & soft cake was ready in no time. Moreover, hapiness is kids too relished it🤗.....



Ingredients

  • 100 gms jowar flour
  • 60 gms bajra flour
  • 1 cup curd
  • 1/4 cup water
  • 1 cup coconut sugar
  • 3 tablespoon unflavored oil
  • 1/4 tspn baking soda
  • 3/4 tspn baking powder
  • 1/2 cup grated Mawa
  • 1/2 cup grated carrots
  • 1/2 tspn cardamom powder
  • 1/2 tspn cinnamon powder
  • Milk 2-3 tablespoon if required
  • Salt a pinch 



Method

  • Blend curd, water and coconut sugar in a mixer jar and pour in a deep bowl. 
  • Add baking soda and keep aside for couple of minutes..
  • Sieve flours, baking powder and salt 4-5 times.
  • Add oil, cardamom powder, cinnamon powder to curd mixture and mix well.
  • Gradually add dry ingredients to wet ingredients in batches n mix well.
  • Add grated Mawa and carrots to it and mix.
  • Add milk if required to adjust consistency.
  • Bake in a greased tin in a preheated oven at 170 degree for 50-55 mins.



Notes

  • Curd should not be sour.
  • Coconut sugar can be replaced with jaggery too.
  • If the curd has sufficient amount of water in it , do not add additional water.
  • Act as per your oven temperature and settings.
