Healthy Banana cake..

 Banana is the one fruit which is found throughout the year in the market as well as in most of our houses too. But the fact is that we are forced to throw away atleast few due to over ripening .  No more now, try this recipe with those over ripe bananas and see the magic. Bananas don't go wasted nor the money. Bonus is this healthy and nutritious cake.



Ingredients

  • Wheat flour.           1 cup
  • Ragi flour.               3 tablespoon
  • Brown sugar.          3/4 cup
  • Flax seed powder.   2 tablespoon
  • Cacao nibs.            1 tablespoon
  • Unsweetened cocoa powder.  3 tablespo
  • Bananas.                 3 small ones
  • Baking powder.       1/2 tspn
  • Baking soda.            1/4 tspn
  • Unflavored oil.           3 tablespoon
  • Chopped nuts.          2 tablespoon
  • Salt a pinch
  • Water as required


Method

  • Preheat oven @180 degree for 10 mins.
  • Take a large bowl and mix flaxseed powder with 4 tablespoon water well and keep aside for 5 minutes.
  • Sieve flours, soda, salt, cocoa powder, baking powder 3-4 times.
  • Take 3 ripe bananas and mash It to a smooth paste and add to flaxseed Mixture.
  • Add brown sugar and oil and whisk properly.
  • Add the dry Mixture into the wet mixture gradually and fold it well.
  • Mix cacao nibs and nuts and mix well.
  • Add Little water / milk to adjust consistency.
  • Bake in a greased tin for 45-50 minutes or till the inserted toothpick comes out clean.
  • Let it cool down completely.
  • Slice and enjoy.

Note

  • I took small bananas so added 3 , if it's medium size then 1-2 will be enough.
  • The batter should b little bit thicker.
  • Add sugar as per sweetness of bananas.
  • Sugar can be replaced with Jaggery too.
