Panipuri Crackers

My family is a panipuri freak😀 literally.....to satisfy their taste buds tried my hands on these Panipuri Crackers, believe me, before the crackers cooled down my son & daughter had grabbed half of them from the cooling rack😁......the chataka - pataka crackers are spicy , chatpata and tangy....baked with whole wheat flour & oats... Whole wheat and beetroot swirl bread

Swirls again with my favourite veggie .....THE BEETROOT Ingredients Whole wheat flour.                  2 cups Chirotti rava.                             1 cup Instant dry yeast.                     1 tspn Milk powder(optional)             2 tblspn Unflavoured oil.                        2 tblspn Beetroot puree.                        1/2 cup Warm water as required Salt to taste Method Boil a medium sized beetroot, cool it and blend into puree to get 1/2 cup puree. Take a large deep bowl, add half quantity of each ...flour, rava, yeast, salt, milk powder, oil and knead a soft and sticky dough using warm water. Use stretch and pull method to get a stretchable dough and keep it aside in a greased bowl till it doubles in size. Loved the texture of this Oats-Semolina bread.....let's get started with the recipe Ingredients Chirotti rava(very minute one).  2 cups Oats flour.                                    1 cup Yeast.                                           1 tspn Honey.                                          2 tblspn Milk powder.                               2 tblspn Lukewarm water.                       Half cup Butter at room temperature.    2 tblspn Salt as per taste Method Activate yeast with lukewarm water and yeast, this will take 10 minutes. Add oats flour, Semolina, milk powder and salt into the yeast mixture, mix well and keep closed for 10 minutes. Add butter to it and knead into a dough by adding water little by little. Use the stretch and pull method and knead for 10 minutes and form a sticky yet soft dough and keep aside in a greased bowl for first proofing till it doubles in size. I always love to try out breads with different colours, that too using natural colours. Tried this flower shaped buns with some natural colours..let's see how Ingredients Whole wheat flour.                        2 cups Honey.                                           1 tblspn Yeast.                                             1 tspn  Unflavored oil.                               4 tblspn Pumpkin puree.                             1/2 cup Spinach puree.                              1/2 cup Pumpkin seeds  Salt to taste Lukewarm water as required Method Boil few pieces of diced pumpkin and blend it  to get 1/2 cup of puree. Blanch few spinach leaves, and blend to get 1/2 cup  puree. Activate yeast using  honey and lukewarm water. Gluten-free healthy cake

How to make recipes healthy is what I think when I bake. Tried this vegan, butter free, gluten-free , sugar free cake..yet it's delicious.. Ingredients Ragi flour.                       1/2 cup Jowar flour.                    1/2 cup Date syrup.                     1/2 cup Jaggery syrup.                1/2 cup Baking soda.                   1/4 tspn Baking powder.               1/2 tspn Cold pressed extra Virgin coconut oil.           1/2 cup Vanila essence.                Few drops Dates and walnuts.         2 tblspn Salt a pinch Method Mix thoroughly oil, date and jaggery syrup, vanilla essence. Seive ragi flour, Jowar flour, salt, baking soda, baking powder. Slowly fold in the dry mixture into the wet mixture and mix well. Also add dates and walnuts.  Bake in a preheated oven at 180 degree for 35-40 minutes or till the toothpick comes out clean in a well greased baking tin. Multigrain Red Wine Chocolate cake with palm sugar

Making wines is very interesting but I enjoy baking equally. So thought why not combine both ?? As I like to experiment and bake with different flours and sweeteners to make the recipe healthy enough for kids to consume, I tried this Red wine chocolate cake with multigrain flour and palm sugar as sweetener. The red wine is too home made Beetroot wine. Oreo biscuits are favorite with almost all kids, tried my best to make it healthy..... Ingredients Whole wheat flour               1.5 cups Butter unsalted.                    1/2 cup + 3tblspn Raw cane sugar.                   1 cup + 3 tblspn Dark cocoa powder.           2 tbspn + 1 tblspn Chocolate essence.                1/4 spn Baking powder.                     1 tspn Baking soda.                            1/2 tspn Milk.                                           3 to 4 tblspn Cornflour.                                  1 tblspn Salt a pinch Method Take a bowl , cream well melted butter and raw cane sugar till it becomes light in colour. I love to experiment with breads. Recently during our trip to Ladakh, we bought some pure Kashmiri kesar( saffron). Was wondering how to use saffron as we use it rarely only in some deserts which is made once a while, but breads are baked almost every week in my home. Hence, thought of incorporating it into my bread, let's see how...... Ingredients Whole wheat flour.             3 cups Milk powder.                        2 tblspn Saffron strands.                 1 tblspn Lukewarm Milk                  1/2 cup Lukewarm water.                1/2 cup Tutifruti.                                2 tblspn Honey.                                  2tblspn + 2 tblspn Yeast.                                   1.5 tspn Butter @ room temp.          3 tblspoon Salt to taste Method Add the saffron strands to lukewarm milk and keep it aside for 10 minutes. Healthy choco fill cookies

Dark fantasy choco fill cookies who doesn't like? Not only the kids but even the adults love the crunchy crust with soft chocolate oozing out....but how about a healthy version of it???? Let's see in the recipe below.. Ingredients Whole wheat flour.                   1 cup Roasted ragi flour.                     1/2 cup Melted jaggery.                           1 cup Butter @room temp.                  1/2 cup Baking soda.                                 1/2 tspn Baking powder.                           1tspn Vanila essence.                             Few drops Chocolate essence(optional).     Few drops Cocoa powder.                              2 tbspn Dark chocolate.                             1 cup Method Melt dark chocolate and keep it aside to cool down. Yeast free whole wheat quick bread

A quick bread that too without using yeast. This saves a lot of time , especially those days when one is short of time and want to eat breads.....try it to believe it!! Ingredients Whole wheat flour.                      2 cups Milk.                                                250 ml Vinegar.                                          2 tbspn Baking powder.                             1 tspn Baking soda.                                   1/2 tspn Milk powder.                                  2 tbspn Powdered sugar(optional).         1tspn  Salt as required Method Preheat oven @ 200 degrees  Add vinegar to milk and keep aside for 5 mins. Take a large bowl and sieve whole wheat flour, salt, powdered sugar, milk powder, baking soda and baking powder. Add the buttermilk(milk & vinegar mixture) to the dry ingredients and slowly mix it with a wooden spatula or big spoon. It should be a semi thick batter.(yes this will not be a dough). Pour it into

Curry leaves are easily available in each kitchen, even it can be home grown. It is full of nutrition and health benefits, but we fail to get the benefits as we discard them rather than consuming ......so I experimented with curry leaves and baked this whole wheat curry leaves bread loaf.,... Bake it to take the health to next level. Ingredients Whole wheat flour.              2 cups Semolina(rava) .                    1 cup Curry leaves powder .          2 tablespoon + 1/4 teaspoon Milk powder (optional) .       1 tablespoon Active dry yeast.                     2 teaspoon Unflavoured oil .                     1/4 cup Sugar .                                        2 teaspoon Salt to taste Method Curry leaves powder Wash curry leaves and dry it (not under sun but somewhere where direct sunlight not there) for 3-4 days and then grind it into coarse powder and store it . Activate yeast as mentioned on the pack. Or add yeast and sugar to 2 tablespoon lukew

Whole wheat and beetroot French loaf(baguette)

Baguette breads have become my favourite. Specially when it's made with my favourite veggie beetroot, it becomes highly nutritious.... Ingredients Whole wheat flour .          3 cups Beetroot puree .                  1 cup Dry yeast.                             2 teaspoon Sugar.                                    1 tablespoon Milk powder (optional).     1 tablespoon Any unflavoured oil.           2 tablespoon Sesame seeds(white).           1tablespoon Water to adjust dough Salt to taste Method Activate yeast as mentioned on the pack.(mix yeast and sugar in 2 tablespoon lukewarm water and keep aside for ten minutes till it blooms). Boil 2 medium or 1 large beetroot, cool down and make a puree of it(approx 1 cup puree). In a bowl take whole wheat flour, salt, oil, milk powder, beetroot puree and yeast mixture. Add water slowly as required and make a soft dough.  Cover it and leave it in a well oiled bowl  in a warm place for 2 hours till it doubles in size.
