Curry leaves Whole wheat bread

Curry leaves are easily available in each kitchen, even it can be home grown. It is full of nutrition and health benefits, but we fail to get the benefits as we discard them rather than consuming ......so I experimented with curry leaves and baked this whole wheat curry leaves bread loaf.,...
Bake it to take the health to next level.



Ingredients

Whole wheat flour.              2 cups
Semolina(rava) .                    1 cup
Curry leaves powder .          2 tablespoon + 1/4 teaspoon
Milk powder (optional) .       1 tablespoon
Active dry yeast.                     2 teaspoon
Unflavoured oil .                     1/4 cup
Sugar .                                        2 teaspoon
Salt to taste



Method

Curry leaves powder

Wash curry leaves and dry it (not under sun but somewhere where direct sunlight not there) for 3-4 days and then grind it into coarse powder and store it .


  • Activate yeast as mentioned on the pack. Or add yeast and sugar to 2 tablespoon lukewarm water and leave for 10 minutes to bloom.
  • Take a large bowl and add whole wheat flour, semolina, milk powder, salt, curry leaves powder, oil and activated yeast.
  • Mix all well and add little by little water and form a dough.
  • Take it out on a flat surface, spread some flour and again stretch the dough.
  • Knead the dough by stretching for about 10 minutes till it's a soft and little sticky dough.
  • Place it in a greased bowl for 1.5 - 2 hours for first proofing.
  • After its doubled, take it out on the flat surface and punch out the air.
  • Knead it again for 2 minutes and roll it to form a cylindrical log.
  • Tuck it properly and place it in a greased bread tin.
  • Give a milk / egg wash on it and sprinkle some curry leaves powder on it and keep it for 40 minutes for second proofing in a warm place.
  • Preheat the oven and bake the bread at 200 degrees for 40-45 minutes.
  • Brush butter on the loaf when it's still hot for the shine, then let it cool.
  • Slice it and have it with jam, butter, mayo, sauce or make  sandwiches 
  • Your healthy and nutritious curry leaves bread is ready.



Notes


  • Study your oven first as each oven and it's settings are different.
  • The measurement cup size is 1 cup = 250 ml.
  • The bread loaf tin size is 9.5" * 3.5".
