Gluten-free healthy cake

How to make recipes healthy is what I think when I bake. Tried this vegan, butter free, gluten-free , sugar free cake..yet it's delicious..


Ingredients

Ragi flour.                       1/2 cup
Jowar flour.                    1/2 cup
Date syrup.                     1/2 cup
Jaggery syrup.                1/2 cup
Baking soda.                   1/4 tspn
Baking powder.               1/2 tspn
Cold pressed extra
Virgin coconut oil.           1/2 cup
Vanila essence.                Few drops
Dates and walnuts.         2 tblspn
Salt a pinch


Method


  • Mix thoroughly oil, date and jaggery syrup, vanilla essence.
  • Seive ragi flour, Jowar flour, salt, baking soda, baking powder.
  • Slowly fold in the dry mixture into the wet mixture and mix well. Also add dates and walnuts. 
  • Bake in a preheated oven at 180 degree for 35-40 minutes or till the toothpick comes out clean in a well greased baking tin.
  • Let it cool down, drizzle some date syrup and slice it and serve.


Notes


  • I have used cup size 250 ml.
  • To adjust batter consistency add water.
  • Dry roast both flours before use.
  • Chop dates and walnuts into small pieces
