Masala Idli

Ingredients
  1. Rice                                                                 3 cups
  2. Urad Daal (black gram)                                   1 cup
  3. Methi seeds                                                     ¼ spoon
  4. Curry leaves                                                    8-10
  5. Coriander leaves                                             ½ cup
  6. Green chillies                                                   6-7 nos.
  7. Eating soda                                                      ¼  spoon
  8. Asafoetida (hing)                                             ¼ spoon
  9. Ginger juice                                                     1 spoon
  10. Haldi                                                               ½ spoon
  11. Salt to taste
Method
  • Soak rice, urad daal, methi seeds together 5-6 hours and grind them in a mixer jar with water and make a batter. Leave it overnight to ferment.
  • Add salt, haldi, chopped green chillies, curry leaves, coriander leaves, eating soda, hing, ginger juice, to the batter  and mix it properly.
  • Pour this batter into the idli maker and steam it for 10-15 mins.
  • Masala idlis are ready.
  • Serve it hot with coconut chutney, green chutney, tomato chutney etc
Note :
  • Haldi will give the idlis yellow colour, similarly beetroot juice can be added to give it pink colour and palak puree can be added to give it green colour and make it more healthy.
  • These idlis can be made in small idli maker (to get idlis in small small shape) to make it more attractive, specially it will look appealing in a kids party and its healthier too.

    What should be the consistency/thickness of the batter? Also, how fine should we grind the rice and daal?

    Consistency should be thick when compared to dosa batter, ie. do not add water after its fermented for idlis, if for dosa then u have to add water. Rice and daal should be grind into very fine batter.(when u take the batter in between ur fingers, it should be very very smooth.
