Healthy version of Good Day biscuits

 My husband is a Good Day biscuit fan, so thought of baking them my way so that it will serve as a better option to munch on. To my surprise it came out well. Ingredients Wheat flour.                   1 cup Sorghum flour.              1/2 cup Brown sugar powder    3/4 cup Cardamom powder.      1 tspn Chopped cashews.       2 tablespoon Cashew nut powder.     3 tablespoon Ghee.                                 4 tablespoon Baking soda.                    1/2 teaspoon Baking powder.                 1/4 teaspoon Milk as required Salt a pinch Method Preheat oven at 170 degree for 10 mins. Take a large bowl, add flour, salt , soda, baking powder, cashew powder and sugar powder. Add ghee and rub with Hands to get a sand like texture. Add cardamon powder, chopped nuts and make a rough dough by adding milk little by little. Take a big size of dough and roll into a large chapati using a butter paper. Healthy Banana cake..

 Banana is the one fruit which is found throughout the year in the market as well as in most of our houses too. But the fact is that we are forced to throw away atleast few due to over ripening .  No more now, try this recipe with those over ripe bananas and see the magic. Bananas don't go wasted nor the money. Bonus is this healthy and nutritious cake. Ingredients Wheat flour.           1 cup Ragi flour.               3 tablespoon Brown sugar.          3/4 cup Flax seed powder.   2 tablespoon Cacao nibs.            1 tablespoon Unsweetened cocoa powder.  3 tablespo Bananas.                 3 small ones Baking powder.       1/2 tspn Baking soda.            1/4 tspn Unflavored oil.           3 tablespoon Chopped nuts.          2 tablespoon Salt a pinch Water as required Method Preheat oven @180 degree for 10 mins. Healthy Chocos

  Ingredients Roasted oats powder           1/2 cup Fine semolina.                        2 tablespoon Roasted ragi flour.                 3 tablespoon Ghee.                                        1.5 tablespoon Melted jaggery.                        5 tablespoon Water.                                       1/2 cup Baking soda.                           1/4 tspn Dark chocolate                1/2 cup Salt a pinch Method Boil water add ghee and melted jaggery and mix well. Melt  dark chocolate using double boiling method . Sieve flours, salt, baking soda into a bowl. Add water , jaggery & ghee mixture and melted chocolate. Fold into a dough. Take very small balls press in between palms and give shape or any desired shape of your choice. Lay parchment paper on a baking tray and place all the Chocos on to it and bake in a preheated oven @ 180 degree for 25-30 mins. Let it cool down and transfer to an air tight container.

Spiced pumpkin tea cake

  Ingredients Wheat flour.                       1 1/4 cup Eggs.                                   2 large Organic brown sugar.      1 cup Ground spices                   1 tspn (Cardamom, cinnamon, cloves, black pepper, nutmeg etc ) Baking powder.               1/2 tspn Pumpkin paste.               4 tablespoon Vanilla essence.              Few drops Unflavored oil.                 3 tablespoon Chopped nuts.                 1/4 cup Salt a pinch Method Steam 150 gm pumpkin, make a smooth paste out of it. Preheat oven at 200 degree for ten minutes. Mix chopped nuts with little dry flour n keep aside. Sieve wheat flour, baking powder, ground spice powder 3-4 times. Take a deep and large bowl. Beat eggs till frothy with vanilla essence, brown sugar & salt. It should be double the volume. Add oil, pumpkin paste n beat again Slowly add dry mixture and fold into egg mixture. Lastly add the dry nuts n mix well into batter. Adjust consistency with water/milk if needed.

Ingredients Rice flour     - 1/2 cup Jowar flour - 1/2 cup Dates & chikoo paste - 3/4 - 1cup Baking soda - 1/2 tspn Baking powder - 3/4 tspn Chopped nuts - 1/2 cup Unflavored oil - 5 tablespoon Unsweetened cocoa powder - 3-4 tablespoon Vanilla extract - few drops Salt a pinch Method Preheat oven at 180 degree for 10 minutes. Grease a 5 inch cake tin n lay parchment paper and keep it ready. Soak around 15-18 deseeded soft dates in 3/4 cup hot water for half an hour. Take 3-5 medium size ripe chikoo fruit and remove the skin and seeds. Chop them into small pieces. Put the chopped chikoo and soaked dates along with soaked water in a blender jar n make a smooth paste. Sieve flours, baking soda, baking powder, salt and cocoa powder 3-4 times n keep aside. Take dates & chikoo paste, oil, vanilla extract in a deep bowl and beat well. Add the dry ingredients gradually n fold well. Add chopped nuts n mix well. Gluten free carrot cake

 Some experiments come out beautifully. A gluten-free cake baked with healthy flours & sweetners. Ingredients   Arrowroot powder   - 3/4 cup Jowar flour - 1/2 cup Dates syrup - 1 cup Unflavored oil - 5 tablespoon Curd - 1/2 cup Baking soda - 1/2 teaspoon Baking powder - 1/2 teaspoon Grated carrot - 1 cup Cinnamon powder - 1/2 teaspoon Vanilla essence few drops Salt a pinch Milk if needed Method   Preheat oven at 190 degree for 10 mins. Grease the cake tin and line with parchment paper. Sieve the flours with salt, cinnamon powder and baking powder 3 to 4 times. Take curd in a deep bowl, mix baking soda and keep aside. It will froth up a little. Mix vanilla essence, dates syrup and oil in curd mixture thoroughly. Gradually add dry mixture and grated carrots and fold well. Add few tablespoon of milk if needed to adjust consistency. Pour the batter into tin and bake at 180 degree for 45-50 mins or till the inserted toothpick comes out clean. Gluten-free mawa-carrot cake

 This cake is baked with all the little little stuffs remaining here and there in kitchen πŸ˜€ Few red carrots, little Mawa, little bit of coconut sugar, bajra & jowar flours.... Tadaaa.....a healthy and equally delicious & soft cake was ready in no time. Moreover, hapiness is kids too relished itπŸ€—..... Ingredients 100 gms jowar flour 60 gms bajra flour 1 cup curd 1/4 cup water 1 cup coconut sugar 3 tablespoon unflavored oil 1/4 tspn baking soda 3/4 tspn baking powder 1/2 cup grated Mawa 1/2 cup grated carrots 1/2 tspn cardamom powder 1/2 tspn cinnamon powder Milk 2-3 tablespoon if required Salt a pinch  Method Blend curd, water and coconut sugar in a mixer jar and pour in a deep bowl.  Add baking soda and keep aside for couple of minutes.. Sieve flours, baking powder and salt 4-5 times. Add oil, cardamom powder, cinnamon powder to curd mixture and mix well. Gradually add dry ingredients to wet ingredients in batches n mix well.
