Whole Wheat & Carrot Nankhatai

The very versatile vegetable carrot have been always my favourite when it comes to experimenting with new recipes..... though red carrots tastes better and sweet but orange ones being available all round the year becomes easier to add anytime in the recipes. Thus, came up with a new recipe Carrot Nankhatai which is healthy too as whole wheat flour, rava and gram flour goes into the making alongwith carrots.....

Ingredients 
  1. whole Wheat Flour                                         1 cup
  2. Gram flour (besan)                                         1/2 cup
  3. Rava (sooji)                                                      1/2 cup
  4. Ghee                                                                 1/2 cup
  5. Castor sugar                                                     1 cup
  6.  Grated carrots                                                 1 cup
  7. Yogurt                                                                 1/4 cup
  8. Cardamom powder                                         1 tspn
  9. Baking powder                                                 2 tspn
  10. crushed pistachios                                          a  spoonful                                     
                                                     


Method



  •     Preheat the oven @ 180 degree.
  •     Add grated carrots, whole wheat flour, gram flour, rava, ghee, cardamom powder, baking powder, yogurt & castor sugar into a deep large bowl.
  •      First mix it spatula to bring it together and then use your hands to bring it to a rough dough form. 
  •      Refrigerate the dough for half an hour.
  •      Remove the chilled dough and prepare small balls, give it shape of  nankhatai and place them on the baking tray.
  •     Sprinkle few crushed pistachios on it and bake at 180 degrees for 22-25 minutes or untill done.
  •      Allow it to cool and enjoy.

    
p.s.

  • Dough need not be very smooth, it can be just brought together and roughly scooped with spoon and placed on to the baking tray.
  • Thick yogurt is preferable.
  • Grease the baking tray with ghee.
