Beetroot n Carrot Muffins



When the versatile Carrot meets with the colour rich Beetroot, the result is yummy Beetroot n Carrot muffins.....The nutrition of two wonderful vegetables combined together in one recipe with the goodness of honey and jaggery as sweetner adds to the health value......make it to believe it.....
The villians "Sugar" & " Maida" are totally missing...so have it guilt free....


Ingredients 
  1. Wheat Flour                                                    2 cups
  2. Melted jaggery                                                1 cup
  3. Honey                                                                1/2 cup
  4. Cinnamon powder                                           1 tspn
  5. Oil (unflavoured)                                              1/2 cup
  6. Grated carrot                                                     1 cup
  7. Beetroot puree                                                 1/2 cup
  8. Baking powder                                                  1 tspn
  9. Baking soda                                                        1/2 tspn
                                                      

Method


  •     Preheat the oven @ 180 degree.
  •     Boil 2 medium size beetroot cool down and make a puree in a blender.
  •     Wash the carrots, grate them and keep aside.
  •     Melt jaggery with very little water and allow it to cool.
  •     Add grated carrot, baking powder, baking soda, cinammon powder and wheat flour and mix well and keep aside.
  •     Add melted jaggery, honey, beetroot puree and oil to the dry mixture and mix it well so that it becomes a thick but flowy batter.
  •     Pour the batter in the muffin moulds and bake at 180 degree for 20 mins or till its done.
  •      Allow it to cool and enjoy.

    
p.s.


  • Beetroot puree should not be watery...very little (3-4 spoon) of water should be used to blend.
  • Preheating can be done while preparing the batter to save time.
  • Grease the muffin mould with butter/oil/ghee if its not silicon ones.
