Corn - Palak Sandwich

Ingredients

Brown bread                                                   8 slices
Corn kernels (boiled)                                       1 cup
Butter                                                               as required
Palak Leaves                                                   1 small bunch
Cheese                                                            half cup
Onions                                                             2 medium Nos.
Green chillies                                                   4 nos.
ginger – garlic paste                                       1 spoon
amchur powder                                              half spoon
green chilli sauce                                            2 spoon
Hing                                                                 ¼ spoon
Jeera                                                               ¼ spoon
Cooking oil                                                     2 spoon
Salt to taste



Method

·         Boil the corn kernels and just churn once in a mixer jar so that it gets crushed and keep them aside.
·         Clean and blanch palak leaves and finely chop them.
·         Take a kadhai, heat oil, add jeera, once it changes colour, add chopped onions, green chillies, ginger – garlic paste and sauté till the raw smell of onion goes off.
·         Add salt, green chilly sauce, hing, amchur powder and mix well.
·         Add boiled and crushed corn kernels and mix well. Then add the blanched palak leaves ,mix well  and let it cook with closed lid for 5 mins.
·         Switch of the gas, add cheese to it and mix properly and let the mixture cool down to room temperature.
·         Apply butter to one side of a bread piece, spread the corn-palak mixture, place another bread piece over it, cut into halves (straight or diagonal) and serve.
·         The sandwich can also be grilled.
