whole wheat baby buns

Buns are everyone's favourite, when it is baby buns it will surely attract all....





Ingredients

Whole wheat flour                             2.5  cups
Unflavoured oil                                  1/4  cup
yeast                                                     1.5 teaspoon
Sugar                                                  2 teaspoon
Milk powder                                       2 tablespoon (optional)
Egg or milk                                        2 teaspoon
water as required
salt to taste

Method


  • Mix yeast and sugar in lukewarm water and keep it aside for 10 minutes. It will become frothy.
  • In a mixing bowl, take whole wheat flour, oil, salt and milk powder and mix it well.
  • Slowly add the yeast mixture after ten minutes and mix it with a spatula to get a wet and sticky dough. Add water as required.
  • Transfer the dough on to a large surface and add little flour and start stretching and mixing  the dough.
  • This process has to be done with both hands and for 10-15 minutes. 
  • At the end of 15 minutes you will get a soft dough.
  • Apply oil on it and keep it in warm place for proofing for 1.5-2 hours.
  • After 2 hours, punch the dough and again roll it and mix it well.
  • Make small portions and roll it into small round shapes like a bun and place it in muffin moulds and leave it for second rise for 40 minutes.
  • After the second rise, give it a egg / milk wash, sprinkle sesame seeds on top of it and bake it at 200 degrees for 40 minutes or till it is done in a preheated oven.
  • Apply butter on it before it cools down and cover it with a damp muslin cloth till it cools down completely.


Notes.

  1. I preheated the oven at 200 degrees for 15 minutes.( each oven is different so this may or may not work for everyone)
  2. Yeast can be prepared as per the instructions on the packet.(i used dry active yeast here)
  3. Yeast should be dissolved in lukewarm water and not hot water.
  4. A proper stretching of the dough for 15 minutes is required to get that right texture and soft loaf.
