Ingredients
Whole wheat flour 2.5 cups
Unflavoured oil 1/4 cup
yeast 1.5 teaspoon
Sugar 2 teaspoon
Milk powder 2 tablespoon (optional)
Egg or milk 2 teaspoon
water as required
salt to taste
Method
- Mix yeast and sugar in lukewarm water and keep it aside for 10 minutes. It will become frothy.
- In a mixing bowl, take whole wheat flour, oil, salt and milk powder and mix it well.
- Slowly add the yeast mixture after ten minutes and mix it with a spatula to get a wet and sticky dough. Add water as required.
- Transfer the dough on to a large surface and add little flour and start stretching and mixing the dough.
- This process has to be done with both hands and for 10-15 minutes.
- At the end of 15 minutes you will get a soft dough.
- Apply oil on it and keep it in warm place for proofing for 1.5-2 hours.
- After 2 hours, punch the dough and again roll it and mix it well.
- Make small portions and roll it into small round shapes like a bun and place it in muffin moulds and leave it for second rise for 40 minutes.
- After the second rise, give it a egg / milk wash, sprinkle sesame seeds on top of it and bake it at 200 degrees for 40 minutes or till it is done in a preheated oven.
- Apply butter on it before it cools down and cover it with a damp muslin cloth till it cools down completely.
Notes.
- I preheated the oven at 200 degrees for 15 minutes.( each oven is different so this may or may not work for everyone)
- Yeast can be prepared as per the instructions on the packet.(i used dry active yeast here)
- Yeast should be dissolved in lukewarm water and not hot water.
- A proper stretching of the dough for 15 minutes is required to get that right texture and soft loaf.
