Healthy Whole wheat bread




Baking is always fun, therapeutic and enjoyable. After trying many recipes and going through many bad bakes finally i succeeded in getting a perfect and healthy whole wheat bread.


Ingredients

Whole wheat flour                             2.5  cups
Unflavoured oil                                  1/4  cup
yeast                                                     1.5 teaspoon
Sugar                                                  2 teaspoon
Milk powder                                       2 tablespoon (optional)
Egg or milk                                        2 teaspoon
water as required
salt to taste

Method


  • Mix yeast and sugar in lukewarm water and keep it aside for 10 minutes. It will become frothy.
  • In a mixing bowl, take whole wheat flour, oil, salt and milk powder and mix it well.
  • Slowly add the yeast mixture after ten minutes and mix it with a spatula to get a wet and sticky dough. Add water as required.
  • Transfer the dough on to a large surface and add little flour and start stretching and mixing  the dough.
  • This process has to be done with both hands and for 10-15 minutes. 
  • At the end of 15 minutes you will get a soft dough.
  • Apply oil on it and keep it in warm place for proofing for 1.5-2 hours.
  • After 2 hours, punch the dough and again roll it and mix it well.
  • Add flour if required and form a rectangular shape dough and place it in a well greased bread loaf tin.
  • Press it a little and leave it for second proofing for 45 minutes.
  • After the second rise, give it a egg / milk wash, sprinkle sesame seeds on top of it and bake it at 200 degrees for 50 minutes or till it is done in a preheated oven.
  • Apply butter on it before it cools down and cover it with a damp muslin cloth till it cools down completely.
  • Cut into slices and serve.


Notes.

  1. I preheated the oven at 200 degrees for 15 minutes.( each oven is different so this may or may not work for everyone)
  2. Yeast can be prepared as per the instructions on the packet.(i used dry active yeast here)
  3. Yeast should be dissolved in lukewarm water and not hot water.
  4. A proper stretching of the dough for 15 minutes is required to get that right texture and soft loaf.

  1. Today I made wheat flour bread its didn't come out nice its really dense... pls give me tip for perfect wheat bread.. where made mistakes ... actually it raised well but it came out dense wheat bread pls help me out I tried 2 time I failed 2time I didn't come out... pls help me out

    1. Try kneading for 8-10 minutes, check on the proportion of liquid, and the yeast qtty. Also keep a check on the expiry date of ur ingredients
