Delicious Carrot Cake

Every one knows the versatile vegetable CARROT. This vegetable can be used in subjis, juices and desserts as well. Carrot cake is one such popular recipe. With the benefits of carrots and in the form of Cake...not just the kids but the adults will also simply love it......

Ingredients 


  1. All purpose flour(maida)                                2 cups
  2. Olive Oil / any other oil                                  ½ cup
  3. Sugar (castor)                                                 1 cup
  4. Cinnamon powder                                          1 ½ spoon
  5. Orange zest                                                     1  spoon
  6. Baking powder                                                1 spoon
  7. Grated Carrots                                                1 cup
  8. Chopped mixed dry fruits                               1/3 cup
  9. Egg                                                                  2 nos.


Method

·        Preheat the oven @ 200 degree.
·        Wash the carrots, grate them and keep aside.
·        Sieve the flour, baking powder, cinnamon powder and keep aside.
·        Take another bowl and mix oil, castor sugar and eggs beat well with the help of a beater / blender.
·        Slowly add the dry ingredients (flour mixture) into the wet mixture(oil mixture) and mix well with cut and fold method.
·        Add grated carrots and chopped dry fruits to the mixture and mix well to make a cake batter.
·        Grease a cake tin (any shape of your choice) with oil and dust with flour.
·        Pour the batter into the cake tin, sprinkle one spoon of grated carrots and one spoon of chopped dry fruits on top of batter.
·        Bake @ 200 degree for 20-25 minutes.


p.s.    
ü Baking time may vary depending upon the type of Oven. Insert a knife or spoon into the middle of the cake, if it comes out clean that is the indication that the cake is done.
ü Always allow the cake to come to room temperature and then cut it.
ü Quantity of sugar depends upon the sweetness of carrots.
ü Keep one spoon of grated carrots and chopped dry fruits aside to sprinkle on top of cake batter in cake tin before baking.
ü Half part maida and half part wheat flour can also be used.

ü If the batter is very thick then add little milk to make it thin.
