Cashew Biscuits (GOOD DAY) style
GOOD DAY biscuits is my Husband's favourite. Have been thinking of trying it out in my own kitchen for quite some time and today was that day..... tried it out with whole wheat flour...
Ingredients
- Whole wheat flour 1 1/2 cup
- Rava (Chiroti Sooji) 2 tbspn
- Milk powder 2 tbspn
- Baking powder 1 tspn
- Butter 1/4 cup or 2 tbspn
- castor sugar / powdered sugar 1/2 cup
- Cardamom powder 2 pinch
- Milk + for brushing 2 tbspn
- Vanilla essence 1 tspn
- Crushed cashew nuts 2 tbspn
Method
- Preheat the oven @ 180 degrees.
- In a large bowl, cream butter and castor sugar till it is smooth and creamy.
- Add vanilla essence, cardamom powder to it and mix well.
- Mix whole wheat flour, rava, milk powder, baking powder and 1 1/2 tbspn crushed cashew nuts.
- Slowly add this mixture to the butter mixture and crumble with hands.
- Add milk if required and make a dough.
- Roll out small balls, press a little and give impression on it using a small stick or fork (like that on Good Day biscuits), sprinkle some crushed cashew nuts on it.
- Brush some milk on it and bake @ 180 degree for 18-20 mins or till it golden brown.
- Cool it and store in air tight container.
