Paneer&veggies / Chicken Stuffed Bun

Bun. Such a small word; but so interesting. It is an item that can be sweet or spicy. It can be stuffed or plain. It can be round or designer. It can be had in the morning or evening. Its enjoyed by kids or by adults. And in my family, we all love it - in any size, any shape, any time.

Today I am going to share with you an interesting bun recipe that is yummy, delicious and amazing. So its time now for Stuffed 'bun'anaa....



Ingredients:

Bun

  1. Whole wheat flour 3 cups
  2. Active dry yeast 2 teaspoon
  3. Sugar 2 teaspoon
  4. egg 1 no.
  5. Water 1-1.5 cups
  6. Butter 2 tablespoon
  7. Salt to taste

Stuffing (chicken)

  1. Minced chicken 1/2 cup
  2. Onion 1 medium size
  3. Jeera 1 teaspoon
  4. Oil 2 tablespoon
  5. Garam masala 1 teaspoon
  6. Cumin powder 1 teaspoon
  7. Coriander powder 2 teaspoon
  8. Turmeric powder 1/2 teaspoon
  9. Red chilli powder 1 teaspoon
  10. Coriander leaves 2 tablespoon
  11. Ginger garlic paste 1 teaspoon
  12. Lemon juice 2 teaspoon
  13. Salt to taste
Stuffing (paneer&veggies)

  1. Grated paneer 3 tablespoon
  2. Grated carrots 1 tablespoon
  3. Boiled and mashed peas & corn 2 tablespoon 
  4. Onion 1 medium size
  5. Jeera 1 teaspoon
  6. Oil 2 tablespoon
  7. Garam masala 1 teaspoon
  8. Cumin powder 1 teaspoon
  9. Coriander powder 2 teaspoon
  10. Turmeric powder 1/2 teaspoon
  11. Red chilli powder 1 teaspoon
  12. Coriander leaves 2 tablespoon
  13. Ginger garlic paste 1 teaspoon
  14. Lemon juice 2 teaspoon
  15. Salt to taste


Making the Bun

  • Dissolve the yeast and sugar in lukewarm water, mix well and leave it for 10 minutes to ferment and become frothy.
  • After 10 minutes, take whole wheat flour in a deep bowl, add salt, egg, butter and the fermented yeast.
  • Add lukewarm water as needed and knead it thoroughly to make a smooth and soft dough.
  • Keep this dough covered in a warm place for 2 hours or till it becomes double the size.
  • After 2 hours remove the dough on to the kitchen platform and knead it again for 5 minutes.
  • Divide the dough into 14 equal parts, roll it with hands, spread the stuffing in it and roll it again to give the bun shape and brush some oil on each bun.
  • Arrange all the stuffed buns on to a greased tin/tray leaving little space between each buns and leave it for second proofing for 40-45 mins.
  • Brush egg on the buns and sprinkle some sesame seeds on it.
  • Preheat the oven @ 180 degrees and bake the buns for 35-40 mins 
  • Enjoy yummy stuffed buns after it cools down. 
Making the Stuffing

  • Heat oil in a pan, add jeera and saute diced onion.
  • Add salt, ginger garlic paste, turmeric powder, chili powder, cumin and coriander powder, garam masala and the minced chicken /paneer & veggies and cook well over low flame.
  • Sprinkle some water into it.
  • When the chicken /paneer& veggies is cooked well, add coriander leaves and lemon juice and take off the gas and let it cool 

p.s.


  • Egg can be replaced by 1/4 cup oil(any non flavoured one)
  • Egg wash can be replaced by milk wash.
  • Milk can be used to knead the dough instead of water for softness.
  • Lukewarm water/milk is preferable.
  • Dough has to be properly stretched and kneaded atleast for 10-12 minutes.
  • Baking time differs in each oven so bake till the buns become brown on top.
  • No of buns will vary as per the size.
