Kerala Appam
Rice is the staple food of "Gods Own County"....Kerala. Almost all the food that we eat right from breakfast till dinner are prepared of rice (in any form).
Here is one more recipe made of Rice. Ideally, this is an breakfast recipe in Kerala, but it can be had in lunch or dinner too.

Ingredients
- Rice (soaked) 2 cups
- Grated coconut ½
cup
- Sugar 2-3
tablespoon
- Salt a
pinch
- Cooked rice 1
cup
- Water / coconut water as required to grind a batter
- Baking soda(optional) ½ tablespoon
Method
·
Soak
rice for 5-6 hours.
·
Wash
the soaked rice and put it in a mixer jar.
·
Add
grated coconut, cooked rice and water or coconut water to the rice and blend
together to make a smooth batter.
·
Shift
the batter into a large bowl and keep aside for another 6-7 hours or overnight for
fermentation.
·
After
the batter is fermented, add salt, sugar and baking soda(optional) and mix
well.
·
Heat
a Appachetti (appam pan/smallest kadhai, in case you do not get an appam pan). Brush
it with oil or pour half spoon oil and spread it with the help of a kitchen tissue
paper.

Pour
one full ladle of batter into the pan.
·
Pick
the pan in your hands and roll it so that the batter is spread in an even
manner.
·
Cover
it with the lid and let it cook on medium heat for 2 minutes.
·
Pour
a spoon of oil on all sides so that the sides become crisp.
·
Remove
it from pan and serve hot with vegetable stew, chicken curry, vegetable curry
or kerala style kappa curry(tapioca curry).
p.s.
ü Please note that
sugar and salt has to be added to the batter after it has fermented and ready
to use.
ü Adding soda and
cooked rice will make the Appams softer.
ü Adding coconut
water while making batter will give an authentic kerala touch to the Appams
besides the taste.
ü Picking up the pan
rolling it is an art….do not worry, by the time you are making the fourth appam
you will be an expert.
